A pioneer in America's culinary movement towards sustainable cooking and farm-to-table dining throughout a notable 30-year career. Schmidt has been honored with numerous awards, including the prestigious James Beard Award 3X for "Who's Who", "Great American Chef" and "Best Chef Midwest", Wine Spectator's "Award of Excellence", Gourmet Magazine "Top Tables" & "America's Best Restaurants", and Esquire Magazine “Best New Restaurants” – 5 Awards for Detroit (3X), Denver, & Washington DC.
In addition to building profitable world famous restaurants, he founded “Chefs’ Collaborative” a leading sustainable chefs organization, as well as was on the founding board of Share Our Strength, an organization dedicated to making sure that no child in America grows up hungry.

Schmidt devotes his energy to advance the science of nutritional food, “The Foods That You Love That Love You Back”. This research has advanced “Beef with Benefits” natural meat protein products that deliver great nutrition without the “bad stuff” Neu5Gc that promotes cancer and other illnesses. Schmidt is also the holder of numerous patents through pioneering protein and fiber bonding to create great-tasting nutritious foods. He is the creator of many products for Atkins Nutrition and Gundry MD. He has also served as the director of sports nutrition for GM/Corvette Racing and coordinated catering services for the “24 Hours of Le Mans” race in France, for over a decade.​​
